Chilled Ginger & Lemon Poached Chicken

Ingredients

  • 011.5 lb (680 g) boneless skinless chicken breast
  • 026 cups water
  • 031 thumb fresh ginger, sliced
  • 042 lemons (1 sliced, 1 juiced)
  • 051 tsp salt
  • 062 tbsp fresh parsley, chopped
  • 071 tbsp olive oil
  • 08Cracked black pepper, to taste

Instructions

    In a wide pot, combine water, ginger slices, sliced lemon, and salt. Bring to a gentle simmer.

    Lower chicken into the liquid. Reduce heat so the surface barely shimmers (no bubbles).

    Poach uncovered for 14–16 minutes, until internal temperature reaches 165°F (74°C).

    Transfer chicken to a plate and refrigerate uncovered for at least 30 minutes, or until fully chilled.

    Slice thinly. Drizzle with olive oil, lemon juice, parsley, and black pepper before serving.
