Cottage Cheese Egg Bites

GLP-1 users often eat one or two bites, get full, and need food again later. Single-serve bites keep protein up without forcing a full meal.

Ingredients

  • 016 large eggs
  • 021 cup low-fat cottage cheese
  • 031/2 cup chopped spinach
  • 041/4 cup diced bell pepper
  • 051/4 cup shredded reduced-fat cheese
  • 06Salt, pepper, garlic powder

Instructions

    Preheat oven to 350°F (175°C). Grease a 6-cup muffin tin.

    Blend eggs and cottage cheese until smooth (or whisk hard).

    Stir in spinach, peppers, cheese, and seasoning.

    Pour into muffin cups about 3/4 full.

    Bake 22–25 minutes until set in the middle. Cool before storing.
