Instructions

Preheat oven to 350°F (175°C). Grease a 6-cup muffin tin.

Blend eggs and cottage cheese until smooth (or whisk hard).

Stir in spinach, peppers, cheese, and seasoning.

Pour into muffin cups about 3/4 full.

Bake 22–25 minutes until set in the middle. Cool before storing.
