Ginger-Lentil & Spinach Curry

Ingredients

  • 011 cup red lentils
  • 022 cups baby spinach
  • 031 thumb fresh ginger, grated
  • 041 onion + 2 garlic cloves
  • 051 tsp turmeric + 1 tsp cumin
  • 063 cups broth + splash of coconut milk

Instructions

    Soften onion 3 min. Add ginger, garlic, spices.

    Add lentils and broth. Simmer 18 min.

    Stir in spinach to wilt.

    Finish with coconut milk.
