Why it helps on GLP-1
Smooth, warm-but-not-hot soups are often the easiest meals on hard GI days. Lemon cuts through 'food aversion,' and added Greek yogurt sneaks in protein without bulk.
Ingredients
- 011 tbsp olive oil
- 021 small yellow onion, diced
- 032 cloves garlic, minced
- 044 medium zucchini, chopped
- 054 cups low-sodium chicken or vegetable broth
- 06Zest and juice of 1 lemon
- 071/2 cup plain Greek yogurt (stirred in off heat)
- 08Salt, pepper, fresh dill
Instructions
- 1
Heat olive oil in a pot. Sauté onion 3 minutes, then garlic 30 seconds.
- 2
Add zucchini and broth. Simmer 15 minutes until zucchini is very soft.
- 3
Remove from heat. Blend with an immersion blender until silky.
- 4
Stir in lemon juice, zest, and Greek yogurt. Do not boil after adding yogurt.
- 5
Season with salt, pepper, and dill. Serve warm — not piping hot.
GLP-1 notes
- ·If meat sounds awful, this is a 'safe' meal that still delivers 14g of protein.
- ·Add a scoop of unflavored protein powder to the warm soup if needed.
- ·Freezes beautifully in single-serve portions.
