Lemon-Zucchini Soup

Smooth, warm-but-not-hot soups are often the easiest meals on hard GI days. Lemon cuts through 'food aversion,' and added Greek yogurt sneaks in protein without bulk.

Ingredients

  • 011 tbsp olive oil
  • 021 small yellow onion, diced
  • 032 cloves garlic, minced
  • 044 medium zucchini, chopped
  • 054 cups low-sodium chicken or vegetable broth
  • 06Zest and juice of 1 lemon
  • 071/2 cup plain Greek yogurt (stirred in off heat)
  • 08Salt, pepper, fresh dill

Instructions

    Heat olive oil in a pot. Sauté onion 3 minutes, then garlic 30 seconds.

    Add zucchini and broth. Simmer 15 minutes until zucchini is very soft.

    Remove from heat. Blend with an immersion blender until silky.

    Stir in lemon juice, zest, and Greek yogurt. Do not boil after adding yogurt.

    Season with salt, pepper, and dill. Serve warm — not piping hot.
