White Bean & Kale Broth

White beans are one of the densest plant sources of calcium and magnesium. Kale adds vitamin K — a bone-density bowl in disguise.

  • 022 cups chopped kale
  • 034 cups broth
  • 041 onion + 2 garlic cloves
  • 05Lemon + parmesan rind (optional)
  • 06Olive oil, salt

Instructions

  1. 1

    Soften aromatics 3 min.

  2. 2

    Add beans, broth, parmesan rind.

  3. 3

    Simmer 15 min.

  4. 4

Stir in kale to wilt. Finish with lemon.
